Vegan Cevapcici

Cevapcici is a Southeast-European dish that consist of minced meat. The meat can be either veal, lamb, pork or beed. It is a nationally recognised dish in countries like Serbia, Bosnia and Herzegovina. You may also find Cevapcici in the neighbouring countries Croatia, Montenegro, North Macedonia, Kosova, Albania and Slovenia. Hospitality Academy decided to make a vegan version of this dish, as we recognise that there are more and more vegans and veganism has become increasingly more important in today’s society.

Ingredients
  • 450ml water
  • 180g quinoa
  • 1 onion, chopped
  • 1 bunch parsley, chopped
  • 1 red chilli, deseeded, halved and sliced
  • 2 1/2tsp salt
  • 1/2 pepper
  • 1tbsp Maizena (starch)
  • 1 lime (only juice of it)

    Method:
    Boil water and put in quinoa. Then reduce the heat and let the quinoa simmer for 10 mins on reduced heat. Take pot with quinoa off heat and leave to stand for another 10mins to absorb the liquid (keep lid on top of pot). Then, put quinoa on a plate and leave to cool.  Add onion, parsley and chilli and mix. Add Maizena flour, season with salt and pepper and add lime juice. Shape mixture into 20 rolls (approx. 2x5cm) and put on a tray to bake.  Bake for approx. 25 mins in the centre of a preheated oven (250 degrees) until they are golden.
