Ingredients You’ll Need

To make a delicious pumpkin pie, gather the following ingredients:

  • For the pie crust:
    • 1 ½ cups all-purpose flour
    • ½ teaspoon salt
    • ½ cup unsalted butter, chilled and cubed
    • 4 to 5 tablespoons ice water
  • For the pumpkin filling:
    • 1 can (15 ounces) pure pumpkin puree (or 2 cups fresh pumpkin, cooked and pureed)
    • ¾ cup granulated sugar
    • ½ teaspoon salt
    • 1 teaspoon ground cinnamon
    • ½ teaspoon ground ginger
    • ¼ teaspoon ground nutmeg
    • ¼ teaspoon ground cloves
    • 3 large eggs
    • 1 can (12 ounces) evaporated milk

Making the Pie Crust

  1. Prepare the Crust: In a mixing bowl, combine the flour and salt. Add the chilled, cubed butter and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
  2. Add Ice Water: Gradually add the ice water, one tablespoon at a time, mixing until the dough comes together. Be careful not to overwork it.
  3. Chill the Dough: Form the dough into a ball, flatten it into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes. Chilling the dough helps prevent shrinkage during baking.
  4. Roll Out the Dough: Once chilled, place the dough on a floured surface and roll it out into a circle, about 1/8 inch thick. Carefully transfer it to a 9-inch pie pan. Trim any excess dough and crimp the edges for a decorative finish.
  5. Pre-Bake the Crust: Preheat your oven to 425°F (220°C). Line the pie crust with parchment paper and fill it with pie weights or dried beans. Bake for 10 minutes, then remove the weights and parchment, and bake for an additional 5 minutes until lightly golden. Let it cool while you prepare the filling.

Making the Pumpkin Filling

  1. Combine Ingredients: In a large mixing bowl, whisk together the pumpkin puree, sugar, salt, and spices until well blended.
  2. Add Eggs and Milk: Add the eggs and evaporated milk to the mixture. Whisk until the filling is smooth and creamy.

Assembling and Baking the Pie

  1. Fill the Crust: Pour the pumpkin filling into the pre-baked pie crust, smoothing the top with a spatula.
  2. Bake the Pie: Bake the pie in the preheated oven at 425°F (220°C) for 15 minutes. Then, reduce the temperature to 350°F (175°C) and continue baking for 40 to 50 minutes, or until the filling is set and a toothpick inserted in the center comes out clean.
  3. Cool: Once baked, remove the pie from the oven and let it cool on a wire rack. This allows the filling to firm up and makes it easier to slice.
