Grant Achatz - A Legendary Alumni of CIA
Grant Achatz was born in a small town in Michigan, USA in 1974. There, he first started his culinary career, working at his family owned restaurant. Quickly realizing that cooking had become a passion for him, Achatz decided to take his career to the next level. He enrolled in one of the most prestigious culinary schools in the USA, the Culinary Institute of America.
During his education Grant Achatz would learn many standards and techniques he prides on today. As he puts it himself:
“I entered the CIA at a very young age with no fine dining or classic training. The school gave me the foundation that is required to execute the cooking style I now use”.
After Graduating from the CIA in 1994, the pinnacle of his culinary career began
Upon graduation, Grant Achatz would spend a brief time working in the Charlie Trotters Chicago restaurant. Later on, he moved to California where he worked for 4 years under esteemed chef Thomas Keller at the French Laundry restaurant. Grant Achatz would later describe Keller as his ideal mentor, having learned a large amount of what he now knows and does.
“It felt like I was rubbing shoulders with the master, I wanted to be Thomas Keller and I was super dedicated to learning how to cook like him.”

With his high quality education and extensive experience under Keller, Grant Achatz was ready to shine!
Grant moved back to Chicago to take over the kitchen of the luxury restaurant Trio in 2001. While already esteemed, Trio would soar in popularity under the leadership of Achatz. Eventually the restaurant achieved 5 stars from Forbes Travel Guide, one of only 13 establishments to hold the rating.
In 2005, Grant Achatz opened his first restaurant, Alinea, in Chicago. The cuisine served at his restaurant was something that, up to this point, had been relatively unheard of:
Molecular Cuisine
This method of cooking involves elaborate tools to extract flavors using chemical and physical reactions within the ingredients. Achatz’s signature addition of complementary smells made Alinea an explosion of sensory experiences. Alinea was named “best restaurant in the USA” by Gourmet magazine in 2006.
Grant Achatz battles cancer
He battled fiercely with tongue cancer, which caused him to lose his sense of taste. Doctors warned him that after his surgery, he only had a 50% chance of living for more than 2 years. However, Grant Achatz beat the odds. While he did indeed lose his taste due to chemotherapy, his sense of taste would recuperate. In the period after his surgery, his taste was non-existent. However, one by one, certain flavors returned to his pallet, starting with the sensation of sweetness.
While understandably shaken by the ordeal, Achatz credits his recuperation as a learning experience. He was able to isolate individual flavors as they came back to him one by one. In his words in regards to the recovery:
“My palate developed just as a newborn — but I was 32 years old. I could understand how flavors were coming back and how they synergized together. ... It was very educational for me. I don't recommend it, but I think it made me a better chef because now I really understand how flavor works."
Despite his health problems, chef Achatz continued to excel
His first and most famous restaurant, Alinea, received 3 Michelin stars. It is the only restaurant in Chicago to do so. Grant also opened another fine dining restaurant, Next, and two cocktail bars. All restaurants and bars have gone on to gain heavy prestige in their field.

Throughout his career Achatz has proven himself to be a creative chef with a unique mind for cooking that has brought him to the very front of the culinary world. He is one of the leading pioneers of molecular cooking on the global stage and has continued to invest in creative technology to help revolutionize the modern dining industry. Grant can be considered to be one of the most exciting, up and coming chefs of the 21st century. However, he could not achieve his goals if he did not take the plunge from his family-owned restaurant to the prestigious classrooms of CIA, as he put it himself:
“You can’t push boundaries without having a foundation. The CIA was critical in building that foundation and that fundamental understanding of food, the way it behaves, the way it comes together.”

How to get your Spanish Visa
An in-depth guide on how to get your Spanish Visa! Europe has an extraordinary volume of tourists that visit it every year. In fact, Spain is the second most visited country in Europe! To capitalize on its extensive culture and appeal, the tourism industry is a booming business, therefore it’s perfect for hospitality students wanting to improve their craft.
One small hurdle is the Spanish visa process
Spain is a beautiful Iberian paradise. It is home to incredible food, beautiful beaches, vibrant culture, and fascinating history. No wonder millions of tourists flock to its shores every year. Whether it is the breathtaking Gaudi-inspired architecture of Barcelona or the crystal clear water and sandy beaches of Tenerife. Spain has got something for everyone. Now, here is how to get your Spanish visa approved:
The documents
When you secure a position in Spain, our team will explain to you the steps of the process of successfully obtaining a Spanish visa. These documents will need to be in Spanish or translated by a certified translator:
Spanish visa Form completed and signed including two passport-size pictures
Signed offer letter
Signed internship agreement (by all three parties: candidate, school & property)
Certificate of enrolment and/or school transcripts
Internship certificate stating that the internship is a mandatory part of the studies
Internship accreditation certificate, stating the university is officially recognized by the government
Passport with a minimum validity of 3-6 months after foreseen conclusion of the internship & passport copy
Health insurance (covering at least 30,000€ for repatriation and valid in Schengen
Cover letter, stating the motivation and/or reasons to go abroad for the internship. It must also clearly state the intention of returning to the home country upon completion.
Proof of accommodation. If not provided by the property, a hotel/hostel reservation has to be made for at least the first week of the stay.
Proof of economic means. Bank statements that show you have at least 537,84 Euros for each month you intend to spend in Spain (ex. If the internship is for 6 months, then the amount must be 537,84 x 6).
Additional documents
In case you are being financed by a family member you need to present the following documents:
A birth certificate to show the relationship
The family member financing must show the bank statements, their paysheet, and tax return for the last 3-4 months
An official document with your name, the ID number of the guarantor, and stating that they will be financially responsible for you during the internship period.
The application process
After you have collected your documents, you will need to send them directly to the Spanish embassy in your country of residence. In some cases, the embassy may also request a short interview prior to approving the Spanish visa. Not to worry, we will hold a separate call to prepare you for the interview.
Once you have had the interview and/or submitted your documents, the embassy will review them. This generally takes between 2-4 weeks. Once it has been approved, you can begin your hospitality adventure abroad!

Moving to the United States to study is an exciting adventure but it can also be extremely stressful. When applying for an F-1 visa, one of the most nerve-wracking parts of the process is attending the embassy interview. This is what we experience with our students. Not to worry; we’ve got a few tips to help make the F-1 visa process as smooth as possible.
F-1 Visa Categories
When it comes to the F1 visa interview questions they are broken down into the following categories:
Study Plans

Prepare your documents
You should have the following documents ready for your F1 visa interview:
Valid passport (for more than 6 months after the completion of your studies)
Financial documents, such as your bank statement and tax return
Medical exam results (if applicable)
Academic documents, including official transcripts and diplomas or certificates of completion for any post-secondary education you've completed in the U.S., or resume/CV if no degree is required at your school. You should also make sure that this information is up-to-date
Be honest and confident
During the F1 visa interview, you will be asked a few questions about your academic and professional background. The officer needs to see that you are well suited for the program, so it's important to highlight your relevant skills and experience. You should also explain why you want to study in the US.
Make sure you are able to answer any follow-up questions about topics such as English language proficiency (if needed), financial resources for studying abroad (including tuition fees), etc.
Be prepared for personal questions
Your interviewer may ask you about your family, friends, and hobbies. The interviewer is not trying to embarrass you; he or she just wants to understand who you are as a person and how the F-1 visa will affect your life in the United States.
If possible, give yourself some time before the interview to prepare. You can do this by writing down all the topics that might be discussed so that when they come up during your interview, it’s not a shock!
Do your research
The interviewer may ask very specific questions about your course/program, university, location, and many more details! Make sure you come well prepared and answer questions with confidence. You could simply answer by mentioning the city or town where the institution is located. If you wish, you can also briefly mention a fact or two about the location. The interviewer may also ask questions about your visa sponsor. When asked this, clearly outline the relationship, their profession, and why they are willing to sponsor you financially.
Important: DO NOT mention how much you will be able to earn in the US! You can mention that with this degree you will have a much higher chance of getting a higher-paying job in your home country.

How well do you know the difference between CPT and OPT? More known as Curricular Practical Training and Optional Practical Training.
Hospitality Academy’s students come from all over the world with an aim to level up their careers abroad. One of the biggest obstacles for young professionals wanting to study in the United States is funding. Therefore, being able to work at the same time as your studies is a great bonus! At Hospitality Academy, students earn an accredited American degree. Additionally, they have the ability to work at the most luxurious hotels or restaurants. But what are the work options available for international students?
Read on to learn about the differences between CPT and OPT. This will help you can decide which work opportunity is right for you!
Curricular Practical Training (CPT):
CPT is a program that allows international students with an F-1 Visa to gain practical experience. The work experience must be directly related to their major area of study. This program enables students to work simultaneously with their studies!
Requirements for CPT:
Students must be enrolled in a university that is authorized to offer a CPT program. There are very few universities that offer this in the USA and many universities only offer from the second semester. At Hospitality Academy, we offer students to participate in a CPT experience from the first day of their studies!
CPT must be part of an established curriculum
CPT must be completed before graduating
CPT can be part-time (20< hours) or full-time (20> hours). Although, if you work full-time for 12 months during your CPT, you will lose your eligibility for OPT
Optional Practical Training (OPT):
OPT temporarily allows international students with an F-1 visa in the USA to work for 12 months. The work is required to be completed as part of their studies.
The OPT work experience must be directly related to your studies.
OPT can be completed both before or after the completion of your studies. However, it can only be started after the first academic year.
Importantto remember: students are only allowed to work 12 months total for OPT!
At Hospitality Academy, our students normally take a post-completion OPT. This allows them to extend their stay in the USA for an entire year upon graduation. Once OPT is completed, students are able to apply for an H-1B work visa with a sponsor.
Differences between CPT and OPT:
Indeed, both CPT and OPT enable international students to work in the USA. However, there are major differences between the two.
The major difference is the time period you're eligible for these programs and type of work allowed.
OPT can be completed before or after graduation, while CPT must be completed before graduation
CPT employment is part of your curriculum allowing students to complete an internship, practicum, or cooperative (co-op) education program
CPT must be required by your major and if it is not, you must receive course credit. You do not need to earn course credit for OPT
Only certain employers and schools participate in CPT
OPT is not employer-specific and allows work, not an internship

Ready to embark on the hospitality industry in the USA or SPAIN?
Enrique Olvera is a name that has become synonymous with Mexican Cuisine and the associations that comes with Mexican food. He is legendary among the culinary community as the name that elevated Mexican Cuisine to the fine dining spectrum.
What makes Olvera unique is the fact that he does not focus on molecular gastronomy or fancy over-the-top plating techniques. Olvera took Mexican food back to its roots, utilizing ingredients to produce the most authentic dishes, with a fine-dining flair.
Enrique Olvera's early life
Food was always a central part of Olvera’s childhood and he remembers it as a celebration.
Inspired by the famed New York-based chefs Jean-Georges Vongerichten and Daniel Boulud, Olvera moved to New York. He studied at the renowned Culinary Institute of America, where he graduated with honors. Olvera perfected the fine dining techniques and became a self-proclaimed “machine of cooking”. Soon after graduating, Olvera returned to Mexico and opened his first restaurant, Pujol in the year 2000.

Not everything was smooth sailing in Olvera’s culinary career. Upon launching his first restaurant Pujol, it was quickly on the verge of shutting down. His meticulous fine dining approach did not appeal to the public.
Olvera had become captivated that there were certain rules and techniques he had to abide by. In order to be amazing and to have a successful restaurant. On Netflix’s Chef’s Table, Olvera said:
“I was too obsessed with trying to produce really high-quality food, and I forgot about having fun”
This realization made Olvera rethink his approach to cooking. In 2004, he centered on his roots with a focus on highlighting traditional techniques and local ingredients. His new, more relaxed, and fun approach to food, made his employees happier. In return, he started to bring the customers through the doors of Pujol. He realized it was better to focus on bettering what he knew best, Mexican cuisine.
Enrique Olvera - later success
Olvera started breaking down Mexican food, to understand what flavors, ingredients, and textures make them so great. He understood that to create delicious dishes, he must utilize great quality produce. What better way to do this, than by sourcing his ingredients locally? For example, Olvera knew that corn is at the heart and soul of Mexican food, but not just any corn. There are hundreds of varieties of corn, due to the spread of domesticated corn, many indigenous species are on the brink of extinction. Olvera partners with local farmers who practice a more traditional way of agriculture known as Milpa. It focuses on a variety of plants coexisting together and helping each other grow, yielding better produce, and preserving variety.
Mole Madre, Mole Nuevo
One of Olvera’s most well-known dishes is Mole Madre, Mole Nuevo. A Mole is a traditional Mexican sauce, containing a multitude of spices, peppers, fruit, and nuts. What makes Olvera’s Mole dish so unique, is its simplicity, yet complexity. The dish features a central ring of young mole, surrounded by a darker circle of 1000 + day aged Mole, served with fresh tortillas. This is an incredibly brave dish, as it features “just” a sauce; if the flavors are not right, there is nowhere to hide. This is the heart of Olvera’s dishes, as he constantly strives to rediscover authenticity, changing his menu and finding new ways to highlight Mexican dishes.
“I want Mexican food to keep moving, I understand that we have beautiful traditions. I feel very proud of those traditions, but I want to keep on building new traditions for the next generations." Olvera told CNN.
Olvera’s gamble was successful, as Pujol is now ranked 9th on the World’s Best Restaurants List. His tasting menu highlights indigenous Mexican ingredients. This proves that both traditional techniques and ingredients have a place in the fine dining culinary scene.
“Pujol is how I picture Mexico City, and how I want people to experience Mexico”.
Olvera took his food empire to New York, where he founded Cosme, in 2014. It was immediately named the best new restaurant of the year, by the New York Times. Currently, Olvera has expanded to owning 15 internationally renowned restaurants. He has also starred on Netflix’s Chef’s Table and as a guest judge on Final Table. In addition, he has written and released 3 cookbooks, celebrating Mexican cuisine.
The elevation of Mexican cuisine
Before Enrique Olvera, Mexican cuisine was often known as street food, but he found a way to break this stereotype. He transformed traditional dishes and street food to a fine dining level. Olvera managed to save his cultural heritage and elevate the standard of cooking in Mexico. He became known worldwide as more than just street tacos and margaritas.

NeuroLeadership for Career Development - Guest Lecture

Hospitality Academy is hosting its first ever guest lecture: NeuroLeadership for Career Development!
Our first ever lecture campaign will be held on Thursday, June 23rd, 2022 via Zoom with our honorary guest, Vanessa Mendes!
Vanessa Mendes is a hospitality and NeuroLeadership lecturer and researcher at the Swiss Hotel Management School. With over 20 years of experience in the hospitality industry, she has been an inspiration to the younger generation. Vanessa gained hospitality experience by working at the HF Hotel as Event Manager and continued to expand her skillset at some of the most prestigious hotel brands like Grand Hyatt, Jumeriah Hotels & Resorts and Ermia Hotels & Resorts before starting her career as lecturer at some of the top hospitality universities.
She began her studies in 2013 with a Bachelor of Business Administration from the University of Combria in Portugal. Upon completion of her degree, Vanessa took her career abroad and and got further certified in different fields from leading universities in the hospitality industry across the world. She studied the ins and outs of luxury hospitality in Portugal, Spain, Switzerland and the USA.
NeuroLeadership Guest Lecture, June 23rd!
Hospitality Academy is thrilled to have Vanessa Mendes join us next Thursday, June 23rd! Even though she began her career in the hospitality industry, Vanessa has also ventured into researching more about NeuroLeadership and wellness.
During the lecture, Vanessa will explain what NeuroLeadership is and how leaders can benefit from applying this brain-minded approach to leading and influencing people. Vanessa has prepared an incredibly detailed presentation to teach the future leaders of the hospitality industry how to become the ideal leader.
